In honor of Cinco de Mayo I thought I would do a round up of a few of my favorite Mexican dishes I have made over the years.  They are easy to make and they taste delicious.  So go ahead and pick one or a few to make your Cinco de Mayo a fiesta!

    Yum. So many delicious dishes to enjoy all spring and summer long. I’m definitely going to give the Cauliflower and Brussel Sprout dish a try. Love the idea of adding a Mexican twist to it.

    Oh, Yum! They all look so good except I wouldn’t partake of the Sunny side up Mexican eggs. The pound cake churro bites look sweet and tasty, the breakfast taco would be great for brunch along with the mango salsa. Homemade red Mexican salsa or restaurant style is so great on most everything. I am getting hungry. I need a taquito or better yet a beef empanada.
