Graham Cracker Peanut Toffee

The house is totally decorated and we are all awaiting the arrival of jolly old St. Nick in our home.  Ever since the kids were small I have always made a sweet treat for St. Nick {Handsome and I} to eat while he is putting the presents under our tree.  The other day I made these yummy Caramel Peanut Clusters.  I was hoping I would have a few left to give to St. Nick, but they were so yummy we’ve already eaten them all.

Handsome requested toffee, but I didn’t want go to all the time and trouble it takes to make traditional toffee.  So, I went to handy dandy Pinterest {follow me here} and found several versions of this easy to make toffee.

It is really easy and delicious too!

Here’s how I made the graham cracker peanut toffee…

Graham Cracker Peanut Toffee

Place the graham crackers in a even layer covering the entire baking sheet.

Cook the butter, sugar, and vanilla mixture.

Spread the mixture over the graham crackers.

Make sure the mixture is covering the graham crackers completely, place in the oven.

Sprinkle the chocolate chips over the hot toffee.  Wait a few moments and spread the chocolate out to an even layer over the toffee.

Sprinkle the nuts over the melted chocolate.  Pressing the nuts down a bit so they stick in the chocolate.  Let toffee cool and then break into pieces.

Ingredients
  • 1 {14.4 oz package} graham crackers
  • 1 cup of butter
  • 1 cup of brown sugar
  • ½ teaspoon vanilla
  • 2 cups semi-sweet chocolate chips
  • ¾ cup chopped peanuts
Directions
  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with a silpat or parchment paper.
  3. Place graham crackers in an even layer over the entire baking pan.
  4. In a medium saucepan over medium heat melt butter and add sugar and vanilla. Cook for 4 minutes until the mixture is a deep golden brown, stirring constantly.
  5. Spread the mixture completely over the graham crackers.
  6. Place the baking sheet in the oven for 8 minutes.
  7. remove from oven and sprinkle the chocolate chips over the baked toffee and let sit for a moment or two. Then spread the melted chocolate evenly over the toffee.
  8. Sprinkle the chopped peanuts over the melted chocolate.
  9. Let cool completely. Then break apart into peices.

St. Nick is going to be very happy this year!

    Toffee is such a great candy for the holidays! I’ve never tried it with graham crackers. It sounds delicious.
