French Toast Sandwich

Sunday morning, I made french toast for breakfast and for some reason I had more than the usually amount of left over egg mixture.  Then, I had this crazy thought!  Why not make a french toast sandwich for lunch?!?!

The photo looks “good enough to eat” – the recipe sound yummy and is definitely going into my “must try” file. Love the combination of the sweetness in there with the jam. Sounds like a twist on a Monte Cristo sandwich.
