Baking Substitutions

  • Baking Powder  ~ For each teaspoon use, 1/4 teaspoon baking soda plus 1/4 teaspoon cornstarch plus 1/2 teaspoon cream of tartar
  • Baking Soda ~ For 1/2 teaspoon use, 2 teaspoons baking powder {must replace the acidic liquid with non-acidic liquid}
  • Buttermilk ~ For 1 cup use, 1 tablespoon lemon juice or white vinegar plus enough milk to make 1 cup
  • Corn Syrup, Dark ~ For 1 cup use, 3/4 cup light corn syrup plus 1/4 cup light molasses
  • Corn Syrup, Light ~ For 1 cup use, 1cup granulated sugar and increase the liquid by 1/4 cup
  • Cream of Tartar ~ For 1/2 teaspoon use, 1/2 teaspoon lemon or white vinegar
  • Cream, Half & Half ~ For 1 cup use, 7/8 cup whole milk plus 2 tablespoons melted unsalted butter
  • Cream, Heavy ~ For 1 cup use, 2/3 cup whole milk plus 1/3 cup melted unsalted butter
  • Cream, Sour ~ For 1 cup use, 1 cup plain yogurt or 1 tablespoon white vinegar plus enough whole milk to fill 1 cup {let stand 5-8 minutes}
  • Extract, Pure Vanilla, for 1 teaspoon use, 1/2 vanilla bean
  • Flour, All Purpose, For 1 cup use, 1 cup self rising flour {omit baking powder and salt from recipe} or 7/8 cup rice flour
  • Flour, Cake, For 1 cup use, 3/4 cup all purpose flour plus 2 packed tablespoons of cornstarch
  • Flour, Pastry, For 2 cups use, 1 1/3 cups all purpose flour plus 2/3 cup cake flour
  • Flour, Self Rising, For 1 cup use, 1 cup all purpose flour plus 1 1/2 teaspoons baking powder plus 1/4 teaspoon scant salt
  • Ghee, For 1 tablespoon use, 1 tablespoon clarified butter or 1 tablespoon vegetable oil
  • Honey, For 1 cup use, 3/4 cup maple syrup plus 1/2 cup granulated sugar or 3/4 cup light molasses plus 1/2 cup granulated sugar
  • Maple Syrup, For 1 cup use, 1 cup honey or 3/4 cup corn syrup plus 1/4 cup butter
  • Molasses, For 1 cup use, 1 cup dark corn syrup or 1 cup honey or 1 cup maple syrup
  • Orange Juice, For 1 cup use, 1 cup reconstituted frozen concentrate {always keep this in your freezer}
  • Sugar, Granulated, For 1 cup use, 1 cup tightly packed light brown sugar
  • Sugar, Brown, For 1 cup use, 1 cup granulated sugar plus 1/4 cup light molasses
  • Sugar, Raw, For 1 cup use, 1 cup brown sugar {light or dark}
  • Vanilla Bean, For 1 Bean use, 2 1/2 teaspoons pure vanilla extract
  • Vinegar, Apple Cider Vinegar, For 1/4 cup use, 1/4 cup white vinegar
  • Vinegar, White, For 1/4 cup use, 1/3 cup lemon juice or 1/4 cup apple cider vinegar
  • Yogurt, Plain, For 1 cup use, 1 cup sour cream or 1 cup buttermilk, or 1 cup whipping cream plus 1 tablespoon freshly squeezed lemon juice
